Awesome cookbook!

I used to have this book back when it was called "The Single Vegan" and I have passed on multiple copies. This book is The Single Vegan expanded, which wasn't that clear in the online description. This is an awesome book and I have been telling everyone about it! I'm too busy to plan meals ahead of time, and the weekly seasonal menus and shopping lists are simply awesome. I find that it costs me around $25 a week to make most of the meals (and that's in California, where food is pretty pricey), and it definitely helps me get my daily nutritious meals and fresh veggies. I have learned to skip some of the recipes, and am looking forward to trying the new ones. Portion sizes range quite widely; sometimes there is a LOT of food, and sometimes just enough. I have tweaked some of the recipes to suit my tastes. If you are a single vegan/vegetarian, or if you are the only one in your family, or if you are looking to eat lower on the food chain and sample local produce, or if you are simply too busy to worry about meal planning, this is the book for you!

Vegan Cooking for One

Excellent for one or two people. Recipes divided into Summer and Winter and then by week. Gives ingredients needed for each week so grocery shopping is easy. Recipes are easy to follow and, so far, have been pretty good.

Vegan cooking for one

As a newly started vegan who lives with a meat eater, this is an excellent book for making quick, simple, tasty and healthy meals. I agree with other reviewers that the recipe sizes are enough for two meal servings, but I like this because I can eat it for lunch at work the next day. The recipes have both imperial and metric measurements, making it easily accessible to everyone. If you choose to follow the recipes weekly, and use the provided shopping list, there is minimal, if any, ingredient wastage, which is excellent when you are just cooking for one. I like the variety of food types - it's amazing how many different tasty vegan meals are on offer - it's easy to take that next step from vegetarianism. I did borrow this book from a library at first to trial the recipes, and then bought a copy, I was so impressed. I highly recommend this book for beginner vegans who need to cook for one or two, and who want recipes that are easy to follow, quick to make, and are healthy and tasty.
